It’s Ireland, and it’s winter and everything stops until springtime, but cows, they just keep going. Having babies over Christmas and there’s something so beautiful in that, how it doesn’t matter that it’s cold and it’s snowing.

I don’t really know the difference between milk cows and meat cows, but I do know that they like to raise baby cows in little shelters that make them very small and very lean. This is made for veal.
